Monday

Dinner Time


1. Kitchen sink salad for dinner: Kale, red cabbage,
red onion, arugula, tuna, avocado, dried cranberries,
and sunflower seeds with a lemon tahini dressing:
  • 2 T tahini
  • 2 T olive oil
  • 1 T coconut milk
  • Lemon juice
  • 1 T peanut butter
  • 1 T balsamic vinegar
 You can keep what's left in the fridge to use again. I usually add a little water or balsamic if it gets too thick.

2. Caramelized cauliflower soup I made using sprouted kitchen's recipe, swapping the hazelnuts with toasted almonds cayenne pepper in place of paprika.
